Lamb Stir-Fry with Hokkien Noodles

Ingredients:

  • 500g lamb, thinly sliced (lamb shoulder or leg works well)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil (for cooking)
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas or bok choy
  • 2-3 green onions, chopped
  • 200g Hokkien noodles (fresh or pre-cooked)
  • Salt and pepper, to taste
  • Sesame seeds for garnish (optional)

Instructions:

  1. Marinate the Lamb: In a bowl, combine the thinly sliced lamb, soy sauce, oyster sauce, cornstarch, salt, and pepper. Mix well and let it marinate for about 15-30 minutes.

  1. Prepare the Vegetables: While the lamb is marinating, wash and chop the vegetables into bite-sized pieces.

  1. Prepare the Noodles: If using fresh Hokkien noodles, separate them gently. If using pre-cooked noodles, follow the package instructions to heat them.

  1. Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.

  1. Stir-Fry the Lamb: Add the marinated lamb to the skillet in a single layer. Stir-fry for about 3-4 minutes until browned and cooked through. Remove the lamb from the skillet and set aside.

  1. Cook the Vegetables: In the same skillet, add a bit more oil if needed. Add the minced garlic and ginger, and stir-fry for about 30 seconds. Then, add the bell pepper, broccoli, and snap peas. Stir-fry for about 5-7 minutes until the vegetables are crisp-tender.

  1. Add the Noodles: Return the cooked lamb to the skillet and toss in the Hokkien noodles. Stir everything together, ensuring the noodles are well mixed with the lamb and vegetables. Cook for an additional 1-2 minutes to heat through.

  1. Garnish and Serve: Serve the lamb stir-fry hot, garnished with chopped green onions and sesame seeds if desired.
