Lamb Pita Bread with Garlic Sauce and Tabbouleh

Ingredients:

For the Lamb:

  • 500g lamb, thinly sliced (lamb shoulder or leg works well)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

For the Garlic Sauce:

  • 1 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt, to taste

For the Tabbouleh:

  • 1 cup parsley, finely chopped
  • 1/2 cup mint, finely chopped
  • 1/2 cup tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup bulgur wheat (optional, soaked in water for 30 minutes)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste

For Serving:

  • Pita bread
  • Lemon wedges (optional)

Instructions:

  1. Prepare the Lamb:
    • In a bowl, combine the sliced lamb, olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and pepper. Mix well and let it marinate for at least 30 minutes.

  1. Make the Garlic Sauce:
    • In a small bowl, combine the Greek yogurt, minced garlic, lemon juice, and salt. Mix well and set aside in the refrigerator to chill.

  1. Prepare the Tabbouleh:
    • In a large bowl, combine the chopped parsley, mint, diced tomatoes, red onion, and soaked bulgur wheat (if using). Drizzle with olive oil and lemon juice, then season with salt and pepper. Mix well and set aside.

  1. Cook the Lamb:
    • Heat a skillet over medium-high heat. Add the marinated lamb and cook for about 5-7 minutes, or until browned and cooked through. Remove from heat.

  1. Warm the Pita Bread:
    • Warm the pita bread in a dry skillet or oven for a couple of minutes until soft and pliable.

  1. Assemble the Pitas:
    • Spread a generous amount of garlic sauce on each pita bread. Top with cooked lamb and a good scoop of tabbouleh.

  1. Garnish and Serve:
    • Garnish with fresh parsley if desired and serve with lemon wedges on the side.

Tips for Success:

  • Marinate the Lamb Longer: For deeper flavor, marinate the lamb for several hours or overnight.
  • Customize Your Tabbouleh: Feel free to add diced cucumber or more vegetables to your tabbouleh.
  • Serve with Pickles: Pickled vegetables can make a great addition on the side.
