Our Minoru Lamb Shoulder – Shank On comes directly from our own family farm in Canowindra, bringing genuine paddock-to-plate lamb straight to your family's table. Left whole with the shank attached, this impressive roast is packed with natural flavour and is perfect for slow cooking.
Lamb shoulder has beautiful natural fat and connective tissue that slowly break down during cooking, keeping the meat incredibly juicy and creating that tender, fall-apart lamb everyone loves. Leaving the shank on adds to the presentation and makes this a fantastic centrepiece for a Sunday roast or family gathering.
Cooking Suggestion:
Season generously with salt, cracked pepper, garlic and rosemary. Place in a roasting dish with a little stock or water, cover tightly and slow roast at 150–160°C for approximately 4½–5½ hours, or until the lamb is beautifully tender and easily pulls away from the bone. Remove the cover for the final 30 minutes to brown and caramelise the outside.
Allow to rest for 20–30 minutes before serving. Pair with crispy roast potatoes, seasonal vegetables and a rich gravy, or pull the lamb apart and serve with flatbreads, salads and your favourite sauces.
